Pepperoni Cheese Ravioli

This is a quick last minute ravioli dish that is wonderfully packed with spices. The ravioli is store bought and frozen so it is super easy to just pop out of the freezer and serve up with a nice garden salad.
Ingredients -
1 Package Frozen Cheese Ravioli, (25 ounce)
1/2 Pound Fresh Mushrooms, sliced
1 Package Sliced Pepperoni, (3.25 ounce), diced
1 Small Yellow Onion, cut into wedges
1 Tablespoon Butter
1 Can Tomato Sauce, (8 ounce)
1/4 Cup Parmesan Cheese, grated
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Dried Basil
1/2 Teaspoon Dried Oregano
1/8 Teaspoon Cayenne Pepper
1/2 Cup Sour Cream
 
Preparation:

1. Cook the ravioli according to the package directions.

2. Sauté the mushrooms, pepperoni and onion in butter in a large saucepan until onion is tender.

3. Stir in the tomato sauce, Parmesan cheese, basil, garlic powder, oregano and cayenne.

4. Cook until heated through.

5. Remove the ravioli from the heat.

6. Stir in the sour cream.

7. Drain.

8. Toss with the cream sauce.

9. Serve and enjoy.

This is already a very healthy ravioli recipe but if you want to cut down on even more fat and calories, substitue fat free sour cream instead.

If you are out of time you can substitue the tomato sauce and spices for a pre-packaged jar of spaghetti sauce.
